Broccoli Cheddar Skillet (No Eggs)
Ingredients
- 1 small head broccoli (300 g), cut into florets
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200 ml crème fraîche or Greek yogurt
- 1 tbsp chickpea flour
- 120 g sharp cheddar, grated
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven broiler on high.
- In a 25 cm oven-safe skillet, heat olive oil over medium heat.
- Sauté onion for 3-4 minutes until soft, then add garlic and cook for 30 seconds.
- Add broccoli florets, season with salt and pepper, and cook for 5 minutes until bright green and just tender.
- In a separate bowl, whisk crème fraîche (or Greek yogurt) with chickpea flour until smooth. Stir in half of the grated cheddar.
- Pour the mixture over the broccoli in the skillet and stir gently to coat evenly.
- Sprinkle the remaining cheddar on top.
- Broil for 2-3 minutes until the cheese is melted and lightly browned.
- Let the skillet rest for 2 minutes before serving.
