Broccoli Cheddar Skillet (No Eggs)

Ingredients

  • 1 small head broccoli (300 g), cut into florets
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200 ml crème fraîche or Greek yogurt
  • 1 tbsp chickpea flour
  • 120 g sharp cheddar, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven broiler on high.
  2. In a 25 cm oven-safe skillet, heat olive oil over medium heat.
  3. Sauté onion for 3-4 minutes until soft, then add garlic and cook for 30 seconds.
  4. Add broccoli florets, season with salt and pepper, and cook for 5 minutes until bright green and just tender.
  5. In a separate bowl, whisk crème fraîche (or Greek yogurt) with chickpea flour until smooth. Stir in half of the grated cheddar.
  6. Pour the mixture over the broccoli in the skillet and stir gently to coat evenly.
  7. Sprinkle the remaining cheddar on top.
  8. Broil for 2-3 minutes until the cheese is melted and lightly browned.
  9. Let the skillet rest for 2 minutes before serving.
