Broccoli Halloumi Garlic Stir-Fry
Steamed broccoli and grilled halloumi cheese quickly stir-fried with garlic for a cheesy, veggie-forward side dish that's light and low-carb.
Ingredients
- 400 g broccoli florets (fresh or frozen)
- 200 g halloumi cheese, sliced into 1 cm thick pieces
- 2 garlic cloves, thinly sliced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Optional: Fresh herbs like parsley for garnish
Instructions
- Steam the broccoli florets for 5-7 minutes until tender-crisp. Drain and set aside.
- Heat a grill pan or non-stick skillet over medium-high heat. Grill the halloumi slices for 2-3 minutes per side until golden and charred. Remove and cut into bite-sized pieces.
- In the same skillet, add olive oil over medium heat. Add sliced garlic and sauté for 1 minute until fragrant but not browned.
- Add the steamed broccoli and grilled halloumi to the skillet. Stir-fry for 2-3 minutes to combine flavors, seasoning with salt and pepper.
- Serve immediately, garnished with fresh herbs if desired.
Recipe Variations
- Add Cherry Tomatoes: Toss in 150 g halved cherry tomatoes during the stir-fry for a burst of freshness and subtle sweetness.
- With Chickpeas: Mix in 200 g cooked chickpeas for added protein and fiber, keeping it hearty yet light.
- Lemon Zest Finish: Sprinkle with a pinch of lemon zest at the end for brightness without acidity (avoid full lemon juice to keep it mild).
Notes
- This dish uses minimal oil for a low-fat profile. Halloumi provides natural saltiness, so taste before adding extra salt.
- Focuses on simple steps and mild flavors to support slow blood sugar release from the broccoli.
- Prep time: 10 minutes. Cook time: 15 minutes. Serves 2 as a side.
