Baked Feta with Cherry Tomatoes and Herbs

A simple, flavorful, and quick Mediterranean-inspired dish where feta cheese is baked until soft and creamy alongside sweet, burst cherry tomatoes.

Ingredients

  • 1 block (200g) Feta cheese (low-fat if available)
  • 300g cherry tomatoes
  • 2 cloves garlic, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • A few sprigs of fresh thyme
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the block of feta in the center of a small baking dish.
  3. Arrange the cherry tomatoes and sliced garlic around the feta.
  4. Drizzle everything with olive oil.
  5. Sprinkle the oregano, fresh thyme sprigs, and a good pinch of black pepper over the feta and tomatoes.
  6. Bake for 20-25 minutes, or until the tomatoes have burst and the feta is soft and slightly golden.
  7. Serve immediately.

Notes

  • This dish is excellent served with a side of cooked green lentils or whole-wheat pasta to make it a more complete meal.
  • You can also add a handful of pitted Kalamata olives to the baking dish for extra flavor.
