Cougette Halloumi Fritters

Ingredients

  • 2 medium cougettes, grated
  • 150 g [[Halloumi]], crumbled or grated
  • 2 eggs, lightly beaten
  • 3 tbsp chickpea flour (or whole wheat flour)
  • 1 tbsp chopped fresh [[Parsley]] or [[Mint]] (optional)
  • ½ tsp freshly ground black pepper
  • Pinch of salt (halloumi is already salty)
  • 1 tbsp olive oil, for frying

Instructions

  • [ ] Grate cougettes and place in a clean kitchen towel; squeeze out excess moisture.
  • [ ] In a bowl, combine drained cougette, halloumi, beaten eggs, flour, herbs, pepper, and a pinch of salt. Mix until just combined.
  • [ ] Shape mixture into 8 small patties, about 1 cm thick.
  • [ ] Heat olive oil in a non-stick pan over medium heat.
  • [ ] Fry fritters, 3–4 minutes per side, until golden brown and cooked through.
  • [ ] Transfer to a paper-towel-lined plate to drain any excess oil.

Notes

  • Ensure cougettes are well drained for crisp fritters.
  • Serve warm with a dollop of plain [[Greek Yogurt]] and a squeeze of lemon.
