Savory Chickpea Crepes with Mushroom & Leek Filling

A simple, high-protein, and gluten-free meal featuring delicate chickpea crepes filled with a creamy and savory mushroom and leek mixture.

Ingredients

For the Crepes

  • 1 cup (120g) Chickpea Flour
  • 1.5 cups (360ml) Water
  • 1/4 tsp Salt
  • 1 tsp Olive Oil, for cooking

For the Filling

  • 1 tbsp Olive Oil
  • 1 large Leek, white and light green parts only, thinly sliced
  • 8 oz (225g) Cremini Mushrooms, sliced
  • 2 tbsp Low-fat Crème Fraîche or Greek Yogurt
  • 2 tbsp Fresh Parsley, chopped
  • Salt and Black Pepper to taste

Instructions

Prepare the Filling

  1. Heat 1 tbsp of olive oil in a skillet over medium heat.
  2. Add the sliced leek and cook until softened, about 5-7 minutes.
  3. Add the sliced mushrooms to the skillet. Cook until they have released their liquid and started to brown, about 8-10 minutes.
  4. Remove the skillet from the heat. Stir in the low-fat crème fraîche, chopped parsley, salt, and pepper. Set aside and keep warm.

Make the Crepes

  1. In a medium bowl, whisk together the chickpea flour, water, and salt until you have a smooth, thin batter. Let it rest for at least 15 minutes.
  2. Lightly oil a non-stick skillet or crepe pan and heat it over medium heat.
  3. Pour about 1/4 cup of the batter into the center of the pan, swirling it to create a thin, even circle.
  4. Cook for 2-3 minutes, until the edges start to lift and the top looks dry. Carefully flip and cook for another 1-2 minutes on the other side.
  5. Slide the crepe onto a plate and repeat with the remaining batter, lightly oiling the pan as needed.

Assemble

  1. Spoon a portion of the mushroom and leek filling onto one half of each warm crepe.
  2. Fold the other half over the filling.
  3. Serve immediately.

Notes

  • The crepe batter can be made ahead and stored in the refrigerator for up to 24 hours.
  • If the batter thickens too much upon resting, whisk in a tablespoon of water at a time until it reaches the desired consistency.
  • A simple green salad makes a great accompaniment.
