Creamy Spiced Chickpea and Spinach Skillet
A quick, satisfying, and creamy one-pan meal that balances earthy chickpeas and fresh spinach with a warm spice blend.
Ingredients
- 1 tbsp Olive Oil
- 1 medium Onion, finely chopped
- 2 cloves Garlic, minced
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Smoked Paprika
- A pinch of Cayenne Pepper (optional, for heat)
- 1 can (400g / 15 oz) Chickpeas, rinsed and drained
- 150g (about 5 cups) fresh Spinach
- 100g Crème Fraîche (or more, to taste)
- Salt and freshly ground Black Pepper to taste
- A squeeze of fresh Lemon Juice (optional)
Instructions
- Heat the olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, coriander, smoked paprika, and cayenne pepper. Cook for another minute until fragrant.
- Add the drained chickpeas to the skillet along with 2-3 tablespoons of water. Stir to coat the chickpeas in the spices and let them heat through for about 3-4 minutes.
- Add the fresh spinach to the skillet in batches. Stir until it has all wilted down.
- Remove the skillet from the heat. Stir in the crème fraîche until a creamy sauce forms.
- Season with salt, pepper, and a squeeze of lemon juice if using.
- Serve immediately.
Notes
- Based on your previous feedback, I've made sure to include a generous amount of Crème Fraîche to ensure a creamy consistency. Feel free to add even more if you like.
- This dish is excellent served with a fried or poached egg on top for extra protein.
