Foil-Baked Salmon With Zucchini And Tomatoes

Individual foil packets with salmon, zucchini and cherry tomatoes — hands-off baking that keeps flavors fresh and light.

Ingredients

  • 2 Salmon Fillets (140–160 g each)
  • 1 Medium Zucchini, sliced into half-moons
  • 12 Cherry Tomatoes, halved
  • 1 Small Red Pepper, sliced (optional)
  • 1 Tbsp Olive Oil
  • 1 Tbsp Fresh Basil, chopped (or 1 tsp dried)
  • 1 Tbsp Lemon Juice
  • Salt and Black Pepper to taste

Instructions

  • Preheat oven to 200°C (400°F). Tear two large sheets of foil.
  • Divide zucchini, tomatoes, and red pepper between foil sheets; drizzle 1/2 tsp oil and season lightly.
  • Place a salmon fillet on each bed of vegetables, drizzle remaining oil and lemon juice, sprinkle basil, salt and pepper.
  • Fold foil into packets and bake 12–15 minutes until salmon is cooked through and vegetables tender.
  • Open carefully and serve directly from packets or onto plates.

Notes

  • Minimal cleanup and gentle steam keeps salmon moist without much fat.
  • Swap basil for parsley if preferred.
  • Good for meal prep; reheat gently in oven.
