Foil-Baked Salmon With Zucchini And Tomatoes

Individual foil packets with salmon, zucchini and cherry tomatoes — hands-off baking that keeps flavors fresh and light.

Ingredients

  • 2 Salmon Fillets (140–160 g each)
  • 1 Medium Zucchini, sliced into half-moons
  • 12 Cherry Tomatoes, halved
  • 1 Small Red Pepper, sliced (optional)
  • 1 Tbsp Olive Oil
  • 1 Tbsp Fresh Basil, chopped (or 1 tsp dried)
  • 1 Tbsp Lemon Juice
  • Salt and Black Pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F). Tear two large sheets of foil.
  2. Divide zucchini, tomatoes, and red pepper between foil sheets; drizzle ½ tsp oil and season lightly.
  3. Place a salmon fillet on each bed of vegetables, drizzle remaining oil and lemon juice, sprinkle basil, salt and pepper.
  4. Fold foil into packets and bake 12–15 minutes until salmon is cooked through and vegetables tender.
  5. Open carefully and serve directly from packets or onto plates.
