Green Bean Potato Sweet Potato Traybake
Roasted green beans, potatoes and sweet potatoes with garlic, topped with a tangy yogurt-mustard dressing for a simple satisfying meal.

Ingredients
For the Traybake
- 300g green beans, trimmed
- 250g regular potatoes, cut into 2cm cubes
- 250g sweet potatoes, cut into 2cm cubes
- 4 garlic cloves, unpeeled
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
For the Yogurt-Mustard Dressing
- 150g low-fat Greek yogurt
- 2 tsp Dijon mustard
- 1 tsp whole grain mustard
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- Place potatoes and sweet potatoes on a large baking tray, drizzle with 1 tbsp olive oil, season with salt, pepper and thyme, and roast for 15 minutes.
- Add green beans and garlic cloves to the tray, drizzle with remaining olive oil, toss everything together, and roast for another 20 minutes until vegetables are tender and slightly caramelized.
- Meanwhile, mix Greek yogurt, both mustards, olive oil, salt and pepper in a small bowl until smooth.
- Remove garlic cloves from the tray, squeeze the soft garlic from the skins, and stir into the yogurt dressing.
- Serve vegetables warm with the yogurt-mustard dressing drizzled over or on the side.
Notes
You can roast the garlic cloves with their skins on - they become sweet and soft, perfect for adding to the dressing. If you prefer a lighter dressing, thin it with a splash of water or plant-based milk.
Variations
- Add 200g halloumi cubes in the last 15 minutes of roasting for extra protein
- Replace green beans with broccoli florets
- Add chickpeas for additional protein and fiber
- Use curry powder instead of thyme for an Indian-inspired version
- Add fresh dill or parsley to the yogurt dressing
