Warm Camembert Bowl With Sweet Potato, Avocado And Edamame
A comforting vegetarian bowl of roasted Sweet Potato cubes, Brown Rice, tender Edamame, creamy Avocado, and warm Light Camembert, seasoned gently with Lemon Juice, Garlic Powder, Salt, and Black Pepper.

Ingredients
- 125 g Light Camembert Cheese
- 200 g Sweet Potato, peeled and diced into 1 cm cubes
- 300 g Cooked Brown Rice

Instructions
Roast The Sweet Potato And Camembert

- Score a shallow cross in the top rind and place the dish into the oven during the final 12–15 minutes of the sweet potato cooking time, until the cheese is soft and melted beneath the rind.
Warm The Rice And Edamame
- Place the Brown Rice, Edamame, Garlic Powder, remaining Salt, Black Pepper, and Water into a covered saucepan.
- Heat over medium-low heat for 4–5 minutes, stirring occasionally until the rice is steaming and the Edamame is tender and bright green.
- Add 1 additional tablespoon of water if the rice starts to stick.
Prepare The Avocado
- Dice the Avocado shortly before assembling the meal.
- Coat gently with the Lemon Juice to preserve color and add brightness.
Assemble The Bowls
- Divide the warm Rice, Edamame, and roasted Sweet Potato cubes between two shallow bowls.
- Add the diced Avocado.
- Spoon half of the warm Camembert over each bowl and serve immediately while soft and creamy.
