Lentil-Crusted Cauliflower Steaks

Thick cut cauliflower steaks topped with a savory crust of soft red lentils, mild garlic powder, nutritional yeast, and olive oil, roasted until tender inside with a golden crispy exterior.

Ingredients

  • 1 large Head cauliflower
  • 100 g Split red lentils
  • 250 ml Water
  • 1 tsp Garlic powder
  • 2 tbsp Nutritional yeast
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Ground black pepper

Instructions

Preparation and Lentil Base

  1. Preheat the oven to 200°C (400°F) and line a large baking sheet with parchment paper.
  2. Rinse the split red lentils under cold running water.
  3. Combine the lentils and water in a small pot, bring to a boil, then reduce heat and simmer covered for 10 to 12 minutes until tender and water is fully absorbed.
  4. Mash the cooked lentils lightly with a fork, then stir in the garlic powder, nutritional yeast, half of the salt, and half of the black pepper until a thick paste forms.

Slicing and Assembling

  1. Trim the bottom leaves off the cauliflower, keeping the core intact so steaks hold together.
  2. Cut two thick steaks from the center of the head, roughly 2.5 cm (1 inch) thick.
  3. Brush both sides of the cauliflower steaks with the olive oil and season with the remaining salt and black pepper.
  4. Place steaks onto the prepared baking sheet and spread the red lentil mixture evenly over the top surface of each steak, pressing down gently to form a firm crust.

Roasting

  1. Roast in the preheated oven for 25 to 30 minutes until the cauliflower is fork-tender and the lentil crust turns deeply golden and slightly crisp.
  2. Remove from the oven and let rest on the tray for 3 minutes before serving.

Note

Cauliflower florets left over from trimming the sides can be tossed in olive oil and roasted on the same baking sheet alongside the steaks.

Troubleshooting

  • Cauliflower steaks falling apart: Ensure you slice steaks from the center of the head where the central core holds the florets together; reserve loose side florets for a separate roast.
  • Crust is too dry before the steak is tender: If the lentil crust browns too quickly before the cauliflower softens, tent the baking sheet loosely with aluminum foil for the final 10 minutes.
