Goat Cheese Chive Omelette
A light and fluffy omelette filled with creamy goat cheese, fresh chives, and a touch of black pepper. Simple, elegant, and ready in minutes.

Ingredients
- 4 large eggs
- 60g soft goat cheese
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon low-fat milk
- 1 teaspoon olive oil
- Salt and black pepper to taste
Instructions
- Whisk eggs with milk, salt, and pepper in a bowl until well combined.
- Heat olive oil in a non-stick pan over medium heat.
- Pour in half the egg mixture and let it set for about 30 seconds.
- Gently lift the edges with a spatula, allowing uncooked egg to flow underneath.
- When mostly set, crumble half the goat cheese over one side and sprinkle with half the chives.
- Fold the omelette in half and slide onto a plate.
- Repeat with remaining ingredients for the second omelette.
