Goat Cheese Chive Omelette

A light and fluffy omelette filled with creamy goat cheese, fresh chives, and a touch of black pepper. Simple, elegant, and ready in minutes.

Ingredients

  • 4 large eggs
  • 60g soft goat cheese
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon low-fat milk
  • 1 teaspoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Whisk eggs with milk, salt, and pepper in a bowl until well combined.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Pour in half the egg mixture and let it set for about 30 seconds.
  4. Gently lift the edges with a spatula, allowing uncooked egg to flow underneath.
  5. When mostly set, crumble half the goat cheese over one side and sprinkle with half the chives.
  6. Fold the omelette in half and slide onto a plate.
  7. Repeat with remaining ingredients for the second omelette.
